My blanket from the closet was pulled out and layered with my soft and light futon. Fall jackets, medium-light sweaters, boots, and scarves are ready for colder temperature. But the weather seems stable here lately, although the air is chilly in the morning and the evening. Fall and winter are my favorite seasons and my heart waits. Well, I don’t need all these things, yet.
While waiting for colder weather, I made this sweet potato cake. Sweet potato is sweet already as we can guess from its name. I thought this is the perfect cake in fall for sweet tooth (like me) who appreciates natural sweetness from an original ingredient itself.
The recipe is very simple: sweet potatoes, eggs, milk or soymilk, and touch of sugar. As the recipe doesn’t use flour, the batter is very light but still satisfactory. I added 30g of sugar but you can adjust the sweetness as you like. The sweet potatoes I got from the local farmer this time were very sweet without sugar so I just added 30g of sugar.
The combination of sweet potato and milk (or soymilk) can reduce swelling of the body and help filling yang qi (positive energy), vital energy. When season changes, we tend to get sick which was caused from a lack of qi, according to the traditional Chinese medicine. Sweet potato is one of the ingredients that can fill our qi of vital energy and helps us gain positive energy when being sick.
*Flourless Sweet Potato Cake*
Benefits for: swelling, loss of appetite, filling yang qi (positive energy)
3 sweet potatoes (medium size, without skins)
½ cup milk or soymilk
Pinch of cinnamon
1 tablespoon flax seed
¼ cup olive oil
- Wash up sweet potato and take skins off. Cut into round slices.
- Soak round-sliced sweet potatoes in a bowl with water for 10 minutes.
- Place sweet potatoes on a microwave-safe plate with 1/4 cup of water. Microwave it for 8 minutes.
- Mash while still hot.
- Add olive oil and cool it down.
- In another bowl, mix eggs, sugar, cinnamon, flax seed, and milk or soymilk.
- Put the batter in a bakeware for 30 minutes at 170 C.
You can adjust sugar and milk as you want. It is up to how the batter looks like. It should not be too soggy but be smooth. I do add flax seed to almost everything I eat from soup to baking. The more fibers we get, the less health problems.
